5 Meals you Can Cook Tonight

I have talked to so many women who would love to make a dinner plan, but have run out of ideas for dinner. If you are in that boat, here are some simple ideas to fill out your weekly menu.

 

Grown Up Grilled Cheese

Forget the white bread and processed cheese food. Try some gouda on whole wheat or garlic Havarti on sourdough. If you are watching calories you can split the sandwich and pair it with Trader Joe’s Roasted Tomato Soup and a small salad. Yum!

 

Lemon Chicken

Simple recipe, delicious results. Serve with some grilled veggies and brown rice.

1 tsp. thyme leaves

½ tsp. pepper

1 clove garlic, minced

1/3 c. lemon juice, fresh squeezed

4 boneless, skinless chicken breasts

Mix all ingredients except chicken breasts together. Pour over chicken breasts in a one-gallon bag to marinade.

Drain marinade. Place chicken breasts in a pan sprayed with light cooking oil. Bake at 350° for 30-40 minutes.

Serves 4.

 

Pesto Chicken

½ c. prepared pesto

6 boneless, skinless chicken breasts

6 slices mozzarella cheese

Pour pesto over chicken breasts in a one-gallon bag. Let marinade.

Drain marinade. Place chicken breasts in a pan sprayed with light cooking oil. Place one slice of mozzarella cheese on each chicken breast.

Bake at 350° for 30-40 minutes.

Serves 4.

 

Spaghetti and Marinara with Veggies

Health-up your pasta with the addition of some veggies lightly sautéed in cooking spray with a few herbs. Delicious and it bulks up
what can otherwise be a thin meal. For some extra protien, heat up a few frozen turkey meatballs.

 

Chicken Cesar Pita

Prep 10 Minutes

Start to Finish 10 Minutes

Serves 4

Ingredients

1 Cesar Salad Kit from the Produce Section of the Grocery Store

1 package pre-cooked chicken cut into cubes

4 pitas

Directions

  1. Cut pitas in half and open up pitas. Put pita haves in the toaster. Toast the pitas and let cool.
  2. Meanwhile, mix together the ingredients from the salad kit (except for the croutons) with the chicken
    chunks.
  3. Stuff the toasted pita with chicken Cesar salad mix.
  4. Garnish with whatever extra goodies (tomatoes, cucumbers, etc.)

It’s always so weird to get your book – Will I still like it? Is it still where I “am”?  Does it hold up?

I have to say – I really, really like it. It’s the kind of advice I wish I would have been given when I was starting out and cooking for my family of four, and then six.

It feels a little weird to be talking about it, but I’m excited, and you’re my people, so if I can’t talk to you about it, who can I talk to.

Last weeks Monday Menu was such a hit we are going to keep going every Monday  – and give away an advance copy of THE WHAT’S FOR DINNER SOLUTION every Monday until October 1st when the book comes out.

Monday: Eating out (after our weigh in – yep – that’s when we eat it up…)

Tuesday: Sushi (because Roger is at a meeting and he hates sushi…)

So since I’m asking you to share some of your favorite recipes, I’m re-sharing one of mine. I’m doing this one on Saturday night when we start our Sabbath.

When I shared this recipe before, two people commented that they didn’t have any of these ingredients in their homes and it would be a waste. I don’t want to be wasteful, but once you try this recipe you will want to have it every week. Don’t worry. These ingredients will be used up…

Asian Chicken Wrap Ups

Prep 20 Minutes

2 cups chopped cooked skinless chicken breast (chop up strips from pre-packaged chicken breasts)

3 tablespoons rice vinegar

1-1/2 tablespoons light soy sauce

1-1/2 teaspoons sesame oil

1/4 cup chopped green onions

1/4 cup sliced almonds

1/4 cup crispy rice noodles

Seasoned salt and pepper

1 cup shredded carrots

1 cup shredded broccoli slaw

Four to six butter lettuce leaves

1/3 cup Peanut sauce (store-bought)

1/3 cup Asian salad dressing for dipping sauce (store-bought)

 

 

Directions

In a medium glass bowl, combine chicken, vinegar, soy sauce, sesame oil, , green onions, and almonds. Mix well. Season to taste with seasoned salt and pepper. Cover and let set in the refrigerator for an hour.

 

Add small containers each of peanut sauce and Asian dipping sauce to platter.

On platter, arrange lettuce leaves. Divide up the chicken mixture and place a mound of it on each leaf. Top with crispy noodles, carrots and cabbage. Roll up the leaf and dip in one of the sauces.

 

Serves 4 as appetizers, 2 adults as a main course

Fear, Panic, and an iPad

Fear, Panic, and an iPad

It was a full blown panic.

A start-calling-the-name-of-Jesus panic.

I had two speaking engagements on Saturday; one was a breast cancer research benefit for my fellow author Susy Flory in her home about an hour away. The other was for a local church in my hometown of San Jose.

I was packed up and ready to  go. In fact, I had time to stop at Starbucks with plenty of time to get to Susy’s.  So I am sitting in the drive thru line at Starbucks, and realize I had left my iPod at home. No problem! I could listen to some tunes on my iPad that I had brought for my notes. (Yes. I’m like all those hipster pastors who preach from their iPads. Word.)I hooked up the iPad to my car’s stereo and…

The problem?

I touched the power button and nothing. Nada.

How could it be? I had charged it all the night before. I should have had battery to spare. But there I was, staring at a blank screen.

AGGGGHHHH

Yes, I had plenty of time to get to Susy’s. But not if I had to go back home (20 minutes) boot up my computer and print the speech (10 minutes) and then recover the lost ground, (another 20 minutes.) I would love to say that I started praying. But really, it was panic and a lot of pleading.

“God, please help me recall my speech. I will do anything if you help me remember it all. Help me, Help me…” And that’s when I heard his voice…

Andy Stanley’s voice. It was coming from the car stereo.

I couldn’t figure it out? How was I listening to one of Andy’s podcasts on leadership if my iPad was out of juice? And that’s when I made one of those “slap-yourself-on-the-forhead-it-would-be-hilarious-if-it-happened-to-someone-else-discoveries”…

I couldn’t see that the iPad screen was on the whole time because I was wearing polarized sunglasses.

All I had to do to see that the iPad was working the whole time was to take off my sunglasses.

UM – are we talkin’ metaphor or what?

It’s like my prayer earlier. God is there waiting the whole time – asking me to come to him with every single need. (Even an iPad that’s on the fritz.) But because of fear, it’s as if I can’t see Him. I just resort to fear.

And that’s usually why I can’t see God: fear. Or it’s close cousin, bitterness.

Menu Monday – What are You Having for Dinner this Week?

I’m Back….

It has been a wild month of travel, MOPS moms, trainings and T-shirts. I left my blog in a corner because I didn’t feel I could give it the attention it deserves.

The other thing that was getting neglected in my house was my meal planning.

With the travel and coming home late and getting up early in the morning, my meal plans took a back seat. Which meant a lot of last minute looking at each other and a lot of rotisserie chickens.

Now don’t get me wrong. I LOVE a rotisserie chicken (especially if it’s a COSTCO rotisserie chicken. To. Die. For.

But when the question becomes not “Should we have rotisserie chicken tonight?” to “What kind of rotisserie chicken should we have?” That’s a problem.

The biggest time, money and energy saver for me is to figure out what I am eating for the week, write it down and put it on the fridge for the world to see. A plan, even if it’s a back-of-an-envelope plan, is a life saver for me.

So, I’ll show you my plan if you show me yours.

I’m doing super accountability here. My plan is that every Monday, I will show you my week’s plan. If you tell me yours by Tuesday night, I will enter you in a drawing for an advance copy of my latest book, THE WHAT’S FOR DINNER SOLUTION.

I know – it looks like I’m cheating. I’m actually only cooking twice this week because of leftovers and going out of town. But isn’t that kinda how life is? If you count in the times that you have to eat on the road because of soccer practice, and then the number of times you could eat leftovers if you planned ahead, or the times that you are eating at a friend’s house, or at your small group, suddenly cooking for a week doesn’t seem so daunting.
