I tried this last night after finding it on Pinterest and we loved it! It’s definitely on my list to make again!
I try to always have meatloaf in the freezer. I cook 2 at a time in a pan that has 8 mini loaves which is the perfect serving size and freeze them. A quick meal to warm up in the microwave and to steam some vegetables which I also keep in the refrigerator.
Currently my go to meal is taco salad. A big hit at our house. Once I answered the phone and told my husband and son to eat without me. And hour later I came to the kitchen to eat some taco salad. They had each had seconds and thirds. Only lettuce, salsa, and some cheese was left. See how popular it is. Now I never leave the kitchen without getting some first.
Macaroni and cheese with tuna and peas is my go-to since those ingredients are staples in my house.
Spaghetti or leftovers from the freezer
Spaghetti, grilled cheese, or something from the freezer. I’m a teacher, my husband works swings three nights a week, and I have older kids in sports with a little one. Dinner is tricky with schedules and I’m exhausted by the time I get home from teaching little kids all day.
I just got my cookbook! I was going to put post-it notes on the recipes we’d try first. I ended up choosing chapters instead! Thank you!
Canned soup or something from the freezer. Hoping to start making more “freezer meals.”
Spaghetti with Ragu sauce is quick and easy for me, and my kids love it.
Either fried eggs, bacon, toast…or if I am being healthier (that day!) then baked chicken breasts dipped in a egg (beaten) and dredged in bread crumbs/parsley/parm cheese….bake…steamed broccoli and steamed brown rice (both out of the bag)…and rolls. Done.
PS….LOVED the video on the cube steaks….which I make a lot in the winter…and excited to see how this all works out! Very interested in trying it!
Our go to recipe-chicken over pesto pasta. I’ll use rotisserie chicken if I need otherwise I just saute some chicken breasts.
Oh my goodness I forgot about dinner! Salad with a quick roasted chicken shredded with some salsa. Taco’s since I always have ground turkey on hand. I also do spaghetti noodles with a can of no bean chili for the sauce (kids love it). As you can see I really need help with recipes!!
Breakfast for dinner is usually always a good go-to for our family. I always have the basics (eggs, milk, bread, etc) on hand.
Gosh Kathi you nailed it in the podcast when you said dinners can be a surprise. After the boys football I feel like that daily lately. I hope this helps me get it together!
Crackers, various cheese from the fridge, wine, few veggies, more wine
Italian-style bean stew: lightly fry some garlic, toss in one can of tomatoes and one can of canellini beans plus some salt and herbs (rosemary rocks). Serve with bread. It’s vegan but carnivores can add bacon at the fried garlic stage, or you could add cheese for extra protein and have it vegetarian-friendly.

When I “forget” to prep we have fresh eggs from our chickens and bacon or sausage from our pigs for dinner. It delicious but I want more for my family.
This sounds like a must try book! I am a school teacher and seem to be eating out more and more as I’m just too tired to cook when I get home. I think I’ll buy one for my daughter too. She is getting married in November and her days will get busier and busier.

You’ve got me hooked, Kathi! I’m excited to give this a try!! In our house, my go-to didn’t have time to cook…or failed to plan…recipe is “ham goop”…diced ham, canned potatoes, canned corned, canned green beans…heat and eat.

This book sounds great. My “go to” meals are tacos, sloppy joes, grilled chicken, and of course a rotisserie chicken with bagged salad.
Spaghetti and steam veggies is my go to!!
Spaghetti, tacos or breakfast (pancakes, waffles, etc) are our “stand-by meals”.
Grilled Cheese and Tomato Soup!!!!
When I’m in a pinch I make speghetti, pancakes or burgers.
Scrambled eggs are fast and easy, add leftover veggies or ham, pre-cooked bacon, cheese etc. Turn it into an omelet by not scrambling or scramble everything and scoop into a tortilla for breakfast burrito. We love breakfast for dinner, especially since there is not time in the morning before running out the door. And yes, we have had the occasional bowl of cold cereal for dinner, too.
Super Nachos! Take a pound of meat out of the freezer and throw it in a bowl of very hot water (while in the packaging) so it thaws in just 10 minutes. Cook on the stove with seasonings and put it on chips with shredded cheese, sour cream, avocado, and salsa. Everyone loves it!
Thankfully, I have a few (and you’ll probably see them many times here!) Tacos. Burgers. Sloppy Joes. Spaghetti. Meatballs. We rarely eat out! So quick is a pretty regular thing!
We love to make a taco ring. Lay crescent roll dough around the outer part of a pizza baking pan to make a ring, fill with taco meat and shredded cheese, fold crescent roll over and bake until crescent rolls are golden brown. Serve with lettuce, tomato, sour cream, etc.
A sanity and money saver, just what I need!! My got to is spaghetti!

Hi. I have been trying to locate where I can comment on Tiffany’s book: our go-to recipe: what we call goulash: ground beef, cans of cut green beans, corn, tomatoes, kidney beans — cooked on the stove and we use the four-cheese (shredded) on top. It makes a wonderful quick and filling meal. I would love to win Tiffany’s cookbook, Eat At Home Tonight….
