Don’t underestimate the power of Fast Food at Home. And the humble grilled cheese can be a very satisfying meal with a cup of soup or a fresh little salad. The other advantage is that grilled cheese can be a DYI kinda meal – if one kid can’t stand tomatoes – no problem – just leave them off.
Grilled Tomato and Cheese Toasties
Ingredients
- 8 slices Sourdough Bread
- 2 tsp Softened Butter
- 8 tsp Dijon Mustard
- 4 oz Cheddar, Gruyere, Havarti, or cheese that melts well
- 8 slices Fresh Tomatoes
Instructions

Put a small skillet (with lid) over medium heat.
Butter one side of each slice of bread.
Smear mustard on the unbuttered side of the bread slices.
Arrange cheese slices over one mustard-covered slice of bread.
Top cheese with tomato slices.
Cover with the other slice of bread.
Place the sandwich in the skillet – heat until bread is golden brown and the cheese is melty.
Slice diagonally and serve.
