Here is why I love summer:
becomes this-
if you do this:
(The world’s easiest, best tasting bruchetta recipe.)
Bruschetta
1 loaf Italian bread, cut into 1/2-inch slices
4 cloves garlic sliced in half length-wise
1/3 cup olive oil
3 tbsp. balsamic vinegar
1/8 cup chopped fresh basil
4-5 medium, ripe tomatoes, peeled, coarsely chopped and drained in a strainer for 20 minutes
pinch of freshly ground black pepper
Add together your basil, olive oil, balsamic vinegar and pepper. Stir together to make dressing.
Toss with tomatoes and let sit for at least 15 minutes (can marinade overnight in the fridge.)
While marinading, toast bread and let cool. Rub the tops of the bread with the garlic. Place the tomato mixture on top of the bread slices.
OK this blog about tomatoes is depressing me. I planted 9 tomato plants. I planted them in different places, used different varieties and planted them early. I did this because I absolutely love home grown tomatoes. However, my crop this year is a dismal failure.
I am having a hard time being happy for all you people who are brainstorming ways to use up your bountiful harvest! I think I will plant them in my front yard next year. I have two giant valley oak trees in my back yard, which provide wonderful shade. However, tomatoes like lots of sunshine and most likely that is my problem. 🙂
Hi Kathi! I stumbled on your blog on Rachelle’s site and I’m so glad. I love this stuff… your recipes look AMAZING. Especially this one… we have a huge garden and a bumper crop of tomatoes right now and I’ve been desperately trying to find something (anything!) to do with them. This looks perfect. I can’t wait to try it. Thank you!
No fresh mozzarella cheese?
