I have been given several recipes (and mental health advice) since starting the 30 Day Challenge. Here is an easy one from Stephanie that has become a great pretty-healthy snack.

Dear Kathi,
 
I think it’s fabulous you are doing this for 30 days.  My husband was laid off and we’ve done it out of necessity and it’s great for soooo many reasons.  But I have a great recipe I “invented” when I was dieting a couple years ago.  I love Mexican food and was trying to find a healthy version of one of my faves.  So here it is:
 
Mix together:
1 can corn
1 can low sodium black beans (drained and rinsed)
1-2 avocado’s, in chunks
as much salsa as you like
1 bag baked tostitos
 
Eat up!  Protein, veggies, carbs, and even a healthy fat (avocados); a whole meal in seconds!  I bet it would taste great with Rogers famous salsa!
