Deluxe Chicken Breasts – Nothing fancy, just tender, cheese-sauced chicken breasts that are good enough to add to your list of weekly specials.
Prep Time 30 minutes
Cook Time 15 minutes
Serves 4
Ingredients:
1/2 cup all-purpose flour
1/4 cup dry bread crumbs
2 egg whites, lightly beaten
2 tablespoons water
4 boneless, skinless chicken breast (approx 4 oz each)
2 tablespoons vegetable oil
For the Sauce:
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup skim milk
1/2 cup shredded cheddar cheese
Preheat oven to 350 degrees. Combine flour and bread crumbs in a shallow flat dish. In a shallow bowl, whisk together egg whites and water. Dip chicken in egg white water mixture, then dredge in bread crumb mixture, turning to coat. In large skillet, heat oil over medium high heat. Add chicken; cook, turning once, until browned about 10 minutes (5 minutes on each side). Place chicken in a lightly greased shallow baking dish. Bake at 350 until cooked through, approx 15 minutes.
To prepare sauce, in a small saucepan over medium heat melt butter. Stir in flour until well combined. Slowly add milk, stirring constantly. Cook, stirring, until thickened about 8-10 minutes. Remove from heat; stir in cheddar cheese. (The heat of the sauce will melt cheese)
Place chicken breasts on serving tray. Drizzle with sauce. Serve immediately. Mmmmm!
